This was my first time using the foil and left it on high for about a week. I feel like the fermentation wasn't as complete during the week as if I had left it in the sun for 2 or 3 days. After the second fermentation started, I left the bottles on the counter (unwrapped) and added blueberries and ginger for about a week to get a good fizz. Kombucha turned out to be sweeter than in other batches. I don't know if that's how I fermented the batch. not giving it enough heat or not fermenting long enough. I have PH strips so I checked the PH and it was in the normal range. I know the winter months are coming soon and leaving it outside in the sun will be impossible. I would like to know if I'm using the wrapper correctly or if I need to make any adjustments to the wrapper or batch.
