They heat up quickly so you have to watch your food because if you look away for a second it could be enough to burn it. And when they're hot, they stay hot. They aren't non-stick, so you'll have to use oil, vegetable oil, etc. for foods you know will stick. However, cleaning with them is not bad. Leave it on for a few minutes and it's almost like a non-stick coating. I love the clean, shiny look of stainless steel; However, they do not stay that way and become discolored from heat, acidic or salty foods. A good stainless steel cleaner is inexpensive and will keep them looking their best.
