Good balance great blade

As long as I keep hitting this sharpener every time this knife keeps its edge very well. Food doesn't really stick to it as the ridged surface seems to prevent it. If your knife sticks to food, dampen it with non-stick spray before cutting. Is it important. The shine of the steel on this knife is beautiful. I'm a tall guy (6ft) and I have pretty big hands. I don't like the knife handle which is too flimsy to hold on to. I also like having a light weight on my knife so my wrist doesn't have to do as much work as the blade itself. It glides through everything. The reason I gave it one star is because the knife is so thick I have a hard time getting those super thin thin slices I'm used to. I'm used to using very thin Japanese knives for cooking. I think the thickness of the spine of the blade belies how far I push my fingers back and it gives me slightly thicker cuts than I'd like when making julienne, brunoise or whatever. If that changes and I get used to it, I'll be happy to restore the extra star. However, I think at this level you fall into the $100 knife category. It's not quite right yet, but it's getting closer. Once you've spent $65-$70 on a knife, you can afford to wait a few checks and get a Zwillilng JA Henckels Twin Four Star 8-inch chef's knife for almost the same price, or a little more for an 8- inch chef's knife. Wusthof Classic knives for $150. I've used both knives before (Wüsthof being the Cadillac of knives) and they both allow me to make really very thin slices which I like for presentations. multiple passes of steel and it has a specific shape that other German knives don't quite have, it's great for everyday use or as a complement to German knives.
