Excellent knife, a bit heavy

I really like this knife. Super sharp out of the box, love the look and feel in my hand. I am the head bartender in a craft cocktail bar, for my purposes it is fantastic but it is very heavy, if this is your essential knife for working in a restaurant kitchen the weight will take its toll on your wrist and arm.

Beautiful but big and heavy

My wife is the family cook and her knife skills are superior to mine. This thing is heavy and their small hands are fed up with the weight and balance of the blade. It's a nice piece of metal, though, and holds its edge and edge quite well. This is a double bevel blade so sharpen and sharpen accordingly. This knife has become my favorite knife, but even my hand gets tired from it. I'm hoping over time to build more muscle in my wrist and forearm so that slicing, slicing and other knife work…

Nicely done.

I was so excited to order this knife. I've been working in the kitchen for many years, but it was only last year that I really got the idea of using my own knives instead of the ones given by work. As this is my first official chef's knife I didn't want to go too far as I'm just learning to sharpen with a stone. The chef at work approved my choice, so here we are. This blade is beauty, pure and simple. And it arrived a day early. Of course I can't attest to the longevity yet, but for now I can…

Sharp and shiny cutlery and knife accessories

I have a collection of Shun knives and I use them in the kitchen every day. Shuns are expensive, but they hold a blade, and Shun's knife sharpener will have you sharpening a blade in seconds. The Brever 8: Professional Chef Knife is a nice addition to my other knives. WHAT I LOVE: - Great value damascus chef knife - Nice looking packaging - Comes with sheath. Use it. He was razor sharp out of the box and lifted the hair from my arm. WHAT I DID NOT: Advertised as a Japanese knife but made in…

Is it a knife or art?

Wow. I couldn't believe my eyes when I opened the box and saw the Black Label Series 8" Brever Chef's Knife. This knife resembles a carefully crafted art knife that can be used in many ways in the kitchen. I wasn't sure if I wanted to show a "Samurai" style knife or just use it for my everyday knife. I said YES to both of them and am really very happy to have it in my kitchen and I really want to use it for all my culinary needs. This knife is very nice to keep in the kitchen cupboard. I made…

Good balance great blade

As long as I keep hitting this sharpener every time this knife keeps its edge very well. Food doesn't really stick to it as the ridged surface seems to prevent it. If your knife sticks to food, dampen it with non-stick spray before cutting. Is it important. The shine of the steel on this knife is beautiful. I'm a tall guy (6ft) and I have pretty big hands. I don't like the knife handle which is too flimsy to hold on to. I also like having a light weight on my knife so my wrist doesn't have to…

Affordable high end knife

I have some high end knives including Shun, Wustoff and some others. Most cost a lot of money, but I'm always on the lookout for new technology and new knives. I stumbled upon this knife by accident which had some terms I was unfamiliar with such as: B. AUS-10, and did some additional research on some of the other features of this knife. The more I read, the more intrigued I became, so I decided to give it a try. When I first received this knife, the first thing that struck me was that it was…
