During quarantine we discovered Italian dramas with English subtitles and watched characters sip endless cups of espresso. This experience caused me to pull my 40 year old 3 bar steam espresso machine out of the cupboard and find that it still works and makes an acceptable espresso, a little light and lacking in crema. In an attempt to try a more authentic espresso, we looked at many espresso machine options and settled on the 15 bar Wirsh model (model CM5418-UL). It arrived within days and produces a deeper, richer coffee with good crema. I love my espresso without sugar or milk, so flavor nuances matter. I've drunk espresso from Turkey to Austria and Switzerland and found that good espresso has a taste that can best be described as almond. If so, your espresso could be great. If it's not there, nothing else will compensate (unless you pour coffee with milk and make a latte or cappuccino). The Wirsh machine produces a wonderful almond flavored drink with just the right crema, even from my local grocery store, 100% Extra Dark Roast Arabica Espresso. We plan on experimenting with different coffees and have ordered a few Italian Lavazza blends before settling on our favorite recipe, but have been more than happy with our purchase so far. A few words about technology. The first few times we installed the funnel and filter in the car it was quite a hassle getting them into place until I found a way to hold the car properly and it became second nature to me. It took about 2 days. In addition, the outside of the machine never gets hot, so you won't burn your fingers or melt plastic bags on nearby objects. Cleaning is very easy as the stainless steel can be wiped clean with a damp cloth, the water tank can be easily rinsed out and the drip tray is removable. We carefully measured the distances and ordered double-walled cups that fit perfectly under the dispenser. I would recommend this car to everyone. You can spend a lot more but not improve the quality of your coffee.
