I like this system. This greatly simplifies the process of cold brewing coffee. You don't have to buy an expensive system like this. I used to use whatever container I had on hand and then pour the coffee through a strainer. But it was dirty and there was a lot of ground in my loft. This system is much easier to clean and the sponge filter catches all the soil, even the smallest. When I make punch, I don't follow her instructions exactly. Here's the best way: After wetting and inserting the sponge filter, coarsely grind 12 oz. coffee and put it in the toddy machine. Then slowly pour in 1 liter of filtered water. Don't stir. Leave to rest for 30 minutes. You will see that the coffee has a crispy crust. After 30 minutes, slowly pour another liter of filtered water. Don't violate the territory. They start to foam nicely - this is called "blooming". Now it can be cold brewed overnight. I put a plate on top to keep dust and everything out. If you leave it for 30 minutes, with the next liter of water, the soil will absorb water more easily and produce blooms. No more crispy, undercooked beans!
