Attached photos show prime beef ribs that I smoked at 275F for 6 hours and selected sliced pork ribs that I smoked at 275F for 4 hours - both were fantastic! I also reverse cooked the NY Strip Steaks, cooked at 225°F for 45 minutes, then increased the heat to high (nearly 500°F) and seared for 90 seconds on each side for a PERFECT medium rare steak . I've cooked beef and pork ribs many, many times and turned NY Strips countless times and the best thing I've ever cooked was with this thermometer, NO JOKE!
