Keeps grease from getting all over you and is great for foods like taco meat. Allows some steam to escape and can be used as a lid to drain liquid or fat from the rim of the pan while food stays inside. Unfortunately, I bought this in hopes that it would keep the fat from spreading on the stovetop while I was roasting the chicken breasts. in olive oil and it was not suitable for this purpose. The mesh-like splash guard distributes the fat so that it covers the oven with a fine mist of oil. With this type, the oil collects in the protective casing and splatters onto the stove as soon as you lift it. So it doesn't really help with the cleanup like I was hoping, it just concentrates more oil in a puddle. It also doesn't give off as much steam as a colander, so it's not good for getting crispy chicken. Still, I'm glad I bought it because it's good for other things!
