I have been using Bialetti mocha pans for many years. For some reason, the bigger the pot, the worse it works. The smallest (for 3 cups) works like a charm - never a problem. Medium (6 cups) works great - very reliable; just a bit picky sometimes. The big ones (9 cups/10 cups) basically don't seem to work! I do everything the same - same grind, same method of filling the hopper (just tap it to settle and then sweep excess coffee over it instead of bagging ground coffee). I'm confused at how poorly this thing works and how much great coffee I've wasted. When I have guests and need to make that much coffee, I only use 3 cups and 6 cups because 9 cups/10 cups (both hex angled and venus cylindrical) are bad. . I've used both with equally poor results; although the hexagonal shape was better; Venus was just terrible.
