I've been using a bamboo board half the size for many years, but when I want to roll dough for pizza or bread, I miss the size. This is perfect for me, I no longer have to use my kitchen table and roll mat on a hard smooth surface where the mat slides. My roll mat fits perfectly on this large board and even when working directly on the board itself it is easy to clean. I usually slice steaks and chicken breasts before wrapping them in plastic wrap or vacuum sealing them for freezing. The board is cleaned with hot water and a soft brush. Even years of cutting sashimi, santoku, chef's knives and choppers, and the bamboo surface is surprisingly smooth. I love the plus size and see no reason why this won't last many years. Bamboo doesn't seem to split like some oak cutting boards or other wooden cutting boards I've used. highlighted.
