This Mandoline Slicer does exactly what you need. No frills and maybe not as solidly built as the super expensive models, but it gets the job done that matters at the end of the day. It's sharp and delivers precise, clean cuts while still having a classic, functional style. Handguards and protective gloves really help you get through a bunch of veggies quickly since you don't have to worry too much about getting hurt. I like how the safety handle squeezes out the remnants of what you ended up cutting off; The last piece pops out for easy cleaning. I didn't find the included cleaning brush that helpful, my bottle brush was much faster for cleaning. A small brush might be more helpful if I get something stuck in the crevices, but that hasn't happened yet. You'll need to use the same angle and even stroke for each cutting motion to ensure you get the same size, but it's the same for every mandolin. This also worked well with very chewy fibrous sweet potatoes. The thickness of the blade is easy to adjust and it has the ability to julienne. Something like this encourages me to cook more fresh vegetables and tubers as it is very quick to prepare and very easy to get good roasting results when everything is the same thickness. If you are curious about mandolins, this is a great purchase for your first outing.
