Update May 19, 2001: Yesterday I baked the same bread again, but kneaded it a little longer. The engine died and smoke came out and I thought it was broken. However, after 15 minutes I was able to turn the device on and use it again. It has to have some kind of component that shuts off the engine when it's been running a certain amount of time or when it gets too hot. However, to be honest, it didn't feel any hotter than previous use. I can never recall this happening to a KitchenAid mixer, although I've mainly used it for beating butter and sugar and beating egg whites, so it may not be a fair comparison. These are lighter functions and do not put as much strain on the engine. That's why I don't shoot stars. However, I will say that I have used professional stand mixers to knead bread in commercial kitchens and their motors do not overheat or shut down. Original Review: This 450w Hamilton Beach stand mixer is close to the KitchenAid Pro 6000 range (their classic range is only 275w) and I really liked it when I first started using it. I've made a graham bread dough starting by using a spatula on high speed for a few minutes to mix some flour, yeast and liquids, then slowing down to add the remaining flour cup by cup before letting go for 9 mix for minutes. This mixer handled it all well, producing a large batch of bread and sturdy enough not to have to walk across the counter at all. The noise level is as expected. During this time, the engine warmed up moderately. I've found that the splatter guard is only useful when mixing the very runny part of this dough at high speed, as very runny mixtures will splatter a bit (you can see this in the photo). In my opinion it's easier to add flour without a collar, but I remember feeling the same the last time I used KitchenAid. I made a short video montage of how I make bread dough and you can check it out to see the different steps in action. Other Observations* Bowl and attachments are easy to insert and remove. If you've used KitchenAid, it's very similar.* The head lift mechanism seems a bit stiff, but that could be because it's new.* Really want to try all the attachments, grinder, pasta roller. and cutter, as well as a vegetable cutter / cheese slicer. Wishlist* It would be great if they sold separate bowls and beaters to work with separated and beaten egg yolks and whites. I want to bake European cakes.
