I bought this pan to replace a previous one that was warped. My main concern when buying it was whether or not I could melt the cheese. It sounds weird, but I like to tossing heaps of packaged mozzarella into the pan and then tossing it into a sandwich or tortilla to give it a crispy texture. I also just melted the cheese and then let it sear and this pan passed the test. Pix reflects THICK bacon and my rice, eggs and veggie breakfast are mixed together. Thick bacon will mark the pan but peel off easily. DO NOT USE ABRASIVES OR CLEANING PRODUCTS or you will ruin the pan. The surface seems to heat up evenly, which is another plus. FLAT like a pancake, which I also baked on it. Let's hope the surface will not deform and stay flat for many years. Cleaning is too easy. I hand wash everything with a non-abrasive cleaner and a rag/sponge/etc. It needs to be rinsed before it can be washed in the dishwasher, so I just add soap and dry it in the dishwasher. If you're trying to melt cheese in a pan, be sure to use pre-packaged shredded cheese and not brick cheese, since pre-packaged cheese contains wax. Surprise, that keeps it separate. I only used mozzarella so if you're trying other cheeses you're on your own. I highly recommend this pan.
