I have 2 sizes of these and I use both. They are great to use under pizza. GF dough is very moist and works best with parchment under. This allows pizza to slide off the paddle easy peezy. Also use when making tortillas and under bread on my cast iron bread/pizza stone (Double sided griddle). These are sturdy enough that if you are doing multiple rounds you can reuse the papers on the next pizza or loaf of bread. Did three rounds of pizza that way.
