Temperature sensor too slow for smoker

Bought to control my range master smoker. For those looking to use it to monitor smoker air temperature, the included sensor has too much thermal mass to respond properly. With the Auto Adjust feature, the best I could get was +/- 20 degrees Fahrenheit around the 230 degree Fahrenheit set point. I used an independent fast temperature sensor to measure the smoker's temperature in parallel with the InkBird PV and found that the (temperature sensor) lagged by at least 10 degrees Fahrenheit, making it impossible to control +/- 5 degrees Fahrenheit. I replaced the sensor with a small type K thermocouple from another temperature monitor nearby and gave it a try. The small thermocouple and fast sensor now track to within a few degrees Fahrenheit. The PID parameters with the high thermal mass sensor were 8, 86 and 21, a low P value of 8 gives this away. The reset results are now 28, 27 and 6 with temperatures now 230 +/- 5 degrees Fahrenheit. Increasing "D" from 6 to 15 and reducing the control period from 4 seconds to 1 second keeps the smoker at 230 +/- 2.5 degrees Fahrenheit. Overall not bad for a $59 smoker. Smoke chicken is how it's spelled.
