Review on Dexter Russell S5197 Traditional Chinese by Lisa Vogt

Oddly enough. I have tried many Chinese chef's knives. The best of these are made right here in the USA by Dexter. I have three different ones (width and thickness) and this one is my favorite due to its extreme thinness. Dexter Russell is the hardest working brand in restaurant kitchens. This is a high carbon stainless steel that will hold an edge very well if not abused. Of course, many chefs and cooks are happy to spend big bucks on fashion brands. The Dexter product gives you 95% profit for 1/5 the cost. I have maybe 10 Dexter products and they are consistently the best value for money.
