I purchased this pan in November 2017 and wanted to give a review now that I've been using it for a while. I love cooking fried chicken in this big beautiful skillet. 11" diameter/base, 3" high from countertop to top of pot. The inner cooking depth/height is approximately 1.5 inches, which is the bottom of the rivets. It sounds tiny, but at 11 inches in diameter, that's a huge area to fill with food. I have a gas range, the largest burner produces a flame about 6 inches in diameter. Because the pan distributes heat evenly, I didn't have any issues with "hot spots" or pushing food around to get to a hotter surface. for cooking.- - - - -1st. Use the medium setting to preheat the pan. Check that the pan is ready to use. Wet the spoon/whatever and add a "little drop" of water to the pan. Appearance "boiling water", the pan is ready. 2. "Easy, easy" oil/heat oil in a pan as if you are boiling eggs. When something like a hamburger isn't needed. For fried chicken, I pour olive oil in to cover just the bottom of the pan and wait for it to heat up. I know the pan is done because I put a small piece of food in the pan near the "side"/not the middle section. A hissing sound should be heard. If not, the pan is not hot enough. Let it warm up longer. 3. Once the tiny morsel is sizzling, add the food to the pan. Once you put a piece of food in the pan, you can't move it at all. It should stay right when it's back in. Food must go through a browning/caramelizing process on the underside before being turned or moved. The meat will stick to the pan but will come off when this process is complete. - - - - -While the chicken is cooking, I place a large bowl of water in the microwave and heat it. When I'm done, I wipe off the oil with a frying pan and then pour in the heated water. By moving it with a spatula, I can loosen 99.9% of anything stuck to the bottom or sides of the pan. Then, later or the next morning, I pour out the water and wash the pot by hand. I dry it thoroughly around the rivets and the rim/top of the pan. They say to get a shiny new pan, clean it with Bar Keepers Friend. Just bought this and haven't used it yet, but with so many recommendations, it should be fine. and cleaning.
