Out of the box I expected it to be calibrated correctly. I made an extreme amount of cheese only to spoil it because of the bad temperature. I didn't realize it until it was too late, the temperature hovered around 30 degrees for a while and I checked the milk with another thermometer. registered at 135. At first I thought my burner wasn't working properly. After this incident I tried to recalibrate this thermometer. Unfortunately, after following the detailed instructions, the temperatures were never accurate. From now on, I'll stick with my regular non-electric cheese thermometer.
