They are heavy cast iron with an enamel finish on top and a ring underneath which provide some insulation from other metal surfaces underneath. I used a small on an outdoor gas stove in combination with another, larger, from another manufacturer, large alone, the heat is too high for small pots, this appliance was able to keep the temperature low so my smallest pan is on the lowest burner power, I haven't used a big one yet. I like its design, it should offer good insulation. Update after 2 or 3 days. I've used both plates at a higher temperature, they're great for dissipating heat without causing unwanted boiling or burning. I noticed that at higher temperatures they seemed to smell like hot plastic. Before I use them next time I let them cook a little to see if the smell comes back and I can burn off that smell.
