Really good knives. I have to be careful not to do that.
Very good knives. I have to be careful not to downplay the fact that since I'm not metal or ferrous, they can cut me. They are sharp but not as sharp as my Heinckle chef's knife. Heickel can be shaped into a razor. Instructions for ceramic knives indicate that they should be sharpened by a professional. That won't happen, I've got better things to do than hunt down a cutler. In any case, ceramic works very well. , you just have to figure out how to sharpen them if necessary :)
