I just got this pan this week and used it to make little pudding rolls. They came out great! And when I say it turned out great, I mean it literally. The loaves came out very easily. But no, after heating it in the oven it bent. However, she only bent a little, not like rubber. However, I slipped my other gloved hand under the tray to hold it on the way to the counter. Such a pan must be handled carefully so as not to spill the hot contents. However, the flexibility of the pan when heating turns out to be an unexpected plus point. When I tried to pull the mini quiches out of the pan, flexing the pan caused some to pop out immediately while others popped loose. I was able to pull out the loose ones - be careful! with your fingertips and place them on the dryer. I lightly greased the pan before pouring the runny quiche, but it was so non-stick that it barely held the canola oil I greased it with in the first place. It just has pearls. I used a dry paper towel to wipe off the excess oil. The mini quiches I made with cheese, condensed milk, caramelized onions, and kale in store-bought phyllo batter were just the perfect size for an appetizer or a light appetizer and side, and when you're hungry then two is enough, maybe with a side salad, which we did. I used nine eggs and other flavorings to make a quiche that's evenly distributed among the eight holes in this pan. They puffed up beautifully when cooked and the appearance made them a great presentation. They're the perfect size to freeze for a snack, and I made this with two loaves of bread left over between three people. eat, best for easy portion control and perfect for freezing. Next adventure for this pan: mini loaves of banana bread. Which again sounds perfect at the size of a mini loaf and is easier to store and keep fresh than a large loaf that takes some time to cook.
