We've used cast iron, teflon, ceramic and aluminum. They scratch well because they're durable and have a sharp, thin edge. I've used it on pans straight off the stove and those that have cooled. It is equally effective in any case and does not melt. They're big enough to hold comfortably in your hand, but the ragged edges make it easy to reach the corners of this (rimmed) roll/cookie sheet. It was near the heat on the stove and didn't melt, but I obviously didn't try it in extreme heat as it wasn't necessary. I wouldn't use it as a spatula (no handle!) but mainly for cleaning up sticky stuff!
