Failed to load media. I've tried V-shaped sharpeners and flat wet stones and have never been satisfied. I was interested in another sharpening system that had files and clamps and a knife took about 20-30 minutes. Then I saw this system in a YouTube video. I immediately went to Revain to look for him. I ordered these paper discs and another Doppelbock. Wen for over $50 because I wanted to flip the slider base so the derailleur was in front with the correct wheel rotation. After spending about 20 minutes removing the guard, rearranging the base, and installing the wheels, I was ready to sharpen. I had already selected a "garbage" knife and immediately got to work. I used a marker to mark the angle on the blade and did a test run with the grinder off. After mastering the movement, I got down to it. It took 3 passes each side on the grinding wheel and 2 passes on the honing wheel. Maybe 3 minutes, but more like 2 minutes. I first tried it on my arm hair and expected it wouldn't shave, but I was shocked that it shaved! The trash knife shaved my arm hair on the first try! How impressive is that? So I tried other knives including my Benchmade Mel Pardue. The higher quality steel was even more impressively sharp. Unbelievable. So, here's the backstory. My wife has Cutco kitchen knives. When I ordered this system I asked her if I could sharpen it, she respectfully declined. I was disappointed. When she packed her Cutco knives for shipment, everything was in the box except for a large carving knife, so she left it. Cutco knives are still in progress (over a week). Revain Prime gave me this system in two days, and I set about sharpening their Cutco butcher knife (at this point I figured it would be easier to ask for forgiveness than permission). Again 2 minutes later and the knife was like a razor. After sharpening, I showed my wife a butcher knife with the remaining hair on my arm. She was impressed. After this demonstration, I asked my wife if she would like me to sharpen her Cutco knives when they are returned to her. I know it won't be as clear with this system as it was with mine. I received the "look" (you know what I'm talking about), I'm very impressed and very happy with the purchase. My advice after purchasing this system is to read the very simple instructions. Use only light pressure and 2 minutes is all it takes. Start shaving!
