This oven constantly adjusts the power to maintain the right temperature. Other ovens (all as far as I know) cycle on and off to maintain the correct temperature, but the temperature is drastically above the set temperature. I have seen up to 100 degrees deviation from the set temperature. This oven is way better, it maintains the same temperature, it cooks food faster and doesn't burn or dry out. This oven has many other good features, but I would only buy it because it has much better temperature control. Another great feature that I haven't seen anywhere else is that you can independently adjust the power of the top and bottom heating elements. in 10% increments. I often use this to heat one side of food (e.g. heat from the bottom to lightly brown the bottom of the tortilla, turn it over, put the cheese on top. The cheese will melt without burning and the other side of the tortilla will be now slightly browned below). I prefer this oven to my previous Breville (which died after about 4 years). This oven has some hard to use features that I found out but don't use (such as setting multiple doneness levels). They do not affect its main function. I don't see any major downsides to it (which is unusual, I usually dislike some things about almost everything). Surprisingly, toasting bread is a bit difficult, although it can be done. The toast preset doesn't work very well. The temperature sensor works well to turn off the oven when the food reaches the set temperature. It would be nice if it continued to report the temperature after turning off the oven (minor complaint). This oven is also a good size, big enough for my 9x13 muffin pan. They claim that this oven is a "fryer". It is not. However, as far as I can tell (and I've done a lot of research), this is by far the best convection toaster out there.
