This is a sturdy, well put-together pastry knife and it has me making biscuits more often because it does its job well. I've had other pastry knives whose blades bend in towards each other, rendering them less effective. Not so with this one, it is heavy enough and sturdy enough to hold up under use.Cleaning is easy - the handle is one piece and so can be submerged without getting water inside of it. The blades can be rinsed easily under a strong spray (think trying to get cold butter off the blades), and it air drys thoroughly.
