About a month ago I bought a Lansky Standard grinder because I wanted to try it out without spending too much. I managed to sharpen a few knives, but not quite. My knives are neglected because I don't sharpen them very well and it's frustrating. So I thought maybe I need an extra coarse rock to really shed the edges. Bingo. This morning I sharpened a very dull French Messermeister knife that had been overused. The tip has broken off, there are a few notches on the edge. Well, the nicks are still there, of course, but after taking 30 hits on each side with the super-rough stone, it was sharp enough to be useful. Surprisingly sharp even. So I added coarse, medium, and fine, and it was almost razor sharp. I could shave with it if I was a little more careful, but it definitely suits me now. This very rough stone was important.
