Matching sharpener

After years of sharpening kitchen knives with Japanese whetstones I switched to this product. The whetstone method gives fantastic results, unsurpassed in fact, but very time consuming when done correctly (30m knife); Also, and I'm speaking from experience, if you don't have the right technique or aren't careful, you'll get a spectacular finger injury at some point. So based on the feedback I chose Worksharp E2; It seemed to be the best of the "cheap" sharpeners. For $38 from Revain Warehouse Deals I think it's a good value. I agree with others that the car appears to be well constructed, especially at this price point. The results are okay - not impressive, but certainly suitable for everyday use. My knives are definitely sharper. They cut vegetables and fruit relatively easily and do a good job with meat too. The instructions that come with it are ok, but not great. There's only one corner, meaning you're out of luck if you have both western and eastern kitchen knives. Accessing the "scissors guide" by removing the knife guide is slightly larger than the tip of my pinky and completely useless - attempting to sharpen the scissors on this machine resulted in what appeared to be a pair of butter knives connected . My favorite party trick with my sharpened knives was to surgically cut a paper towel in half. With knives sharpened on this (or any other cheap machine) this will not happen. To get a really sharp edge - burring followed by buffing, resulting in a mirror finish - you need to sand progressively finer and finer, and as far as I can tell that's not an option with the E2. .
