This plastic countertop guard replaces the one I've had for 25 years and is of a much better quality. Although it's designed to protect the counter, I also use it as a cutting board. I always put double waxed paper on the board before I cut it so I don't cut the plastic and get bits of plastic in my food. Parchment paper would probably be your best bet, so I'll have to try that next time. Very happy with this purchase. Expensive but worth the investment. Product update: Had to return this counter profile due to very sharp corners. He was perfect in every way except that.
