Sharp Edge, Minor Imperfections

Overall this is a good knife sharpening system. It has everything you need for a variety of blades in one case. That's his problem too. This system tries so hard to eliminate a bunch of edges that it doesn't handle extremes well. I bought this system to sharpen kitchen knives of various sizes and purposes. This doesn't work well with thinner blades because they slip and the angle doesn't stay constant. Even with larger blades, longer knives, the angle doesn't seem to suit them. The premise of aligning the bars in the notches for the exact angle is a great idea, but it still doesn't make up for the differences in knife styles. In general, the system is somewhat cumbersome to use. The case is difficult to open. There is no external lock or shutter. Rather, it is opened by pressing on the edge of the lid and the internal lock is released. To open the case, you need to maneuver a bit with both hands. Sharpening seems to work best with medium-sized blades that aren't very long in terms of stability, consistency of sharpening, and ability to consistently reach the full length of the blade. Smaller and larger knives, the clamp is cumbersome to tighten, the handles are not long enough/sturdy and the lead angle is lost near the knife tip. Also, when working at smaller angles you can rip off the surface of the knife if you're not careful, not to mention scratching the shackle itself. I haven't had any slip fingers, although I can see it can happen if you're not careful. It is also worth noting that there are no empty slots for other stones in the chest. If you need to buy additional accessories, there is no place to store them. I'm happy with how sharp this system is, it's just not as easy to use as the instructions make it out to be. I'm sure it will become more intuitive with use, although angle and consistency issues remain.
