Overall a great product. but some dangers

Overall this is a great product. I want this product to consistently display the exact Fahrenheit it is actually cooking. It's frustrating to press HI or LOW and not know what it really means. Above certain temperatures, you can mess up your recipe. Below certain temperatures, you can mess up cooking. So why not let the user see what's really going on? That's called transparency. In cooking, this is called quality control. And most cooks do a great job knowing when the cooking cycle is and what the temperature of the food is. A very unfortunate technical oversight. Nutrient medium for bacteria. I was shocked to learn this the hard way. I prepared the SLOW Cook menu. I set the SLOW cooking time to 3 hours, I set the temperature to 175 degrees. After another 2 hours of the cook cycle, I noticed that the cooking had not started. So I put the thermometer in the stew and after two hours this SLOW cycle was only running at 107 degrees! ! ! !Think about it. The user expects a 3-hour SLOW cycle and no food is cooked for 2 long hours1 Worse, a slight temperature rise from room temperature to 107 degrees created an optimal environment for rapid bacterial growth. This is an important consumer safety issue. Slow cooking this way is unsafe. Food should always be delivered to a safe area as quickly as possible - yes, even SLOW-cooked food. The temperature needs to reach at least 135-145 degrees, and even more safely 165 degrees, before slow cooking stabilizes. Please don't be fooled by how INSTANT POT interprets the term SLOW COOK. They mean NO COOK for most of the SLOW cooking cycle. In fact, they provide a dangerous environment to stimulate the rapid growth of bacteria during most of the cooking cycle. I called tech support about this issue. Your technical support team was unaware of these food safety requirements! Their tech support team said that SLOW boiling simply means slow cooking. Too many engineers. Not enough cooks involved. They said they would take it to the right people and get back to me. They didn't come back to me.
