Review on ๐Ÿ”ช ZHEN Japanese VG-10 67-Layer Damascus Steel 8-Inch Slicer Chopping Chef Butcher Knife/Cleaver: Superior Quality for Large Cutting Tasks by Danielle Hemp

Revainrating 5 out of 5

I love it! for cutlery and knife accessories

ZHEN Japanese VG-10 67-layer Damascus steel 8-inch disc knife Chef's knife / cleaver, first of all: This is not a cleaver - it's a chef's knife, specifically a "Chinese" chef's knife. I like this type of blade as it is better for cooking vegetables than any other. Metallurgically, this blade is similar to other established knives, meaning the inner core of VG-10 is sandwiched between layers of another stainless steel. this setting gives the blade a very sharp/hard edge as well as better cleaning and anti-rust properties than the vg-10 alone can offer. it also ensures increased tensile strength. and most importantly, it makes it a lightweight knife, although this knife is a bit heavier than some due to its size. The size aspect is unique to this brand/model only - you will not find a Chinese chef's knife of this type. Construction and quality in this size. It is in fact the largest Chinese chef's knife I know of that uses this metallurgical approach. For me and my large ready meals, this large blade is perfect. I need a long and wide blade for bulk peeling, slicing and raking vegetables. You can do a surprising amount of fine detail as the size also ensures stability. I also use it for meat, but this is where the long, sharp, traditional chef's knife actually shines the brightest. My favorite butcher blade is the Tojiro Gyuto DP (DP=Dual Plane=same design as this Chinese chef's knife). Don't expect to see similar cheap versions of this knife made in China. they don't exist. Although made in Taiwan, it's made from Japanese steel and is essentially a traditional Chinese chef's knife with Japanese influences, and it's a really great blade if you're looking for the largest Chinese chef's knife in this metallurgical class. There are smaller and cheaper versions of these, some made by Zhen but others as well, and this might be a good place to check as well. However, if you're a big cook and have medium to large hands, this is a great option.
