I'm so excited to share the recipe for pickled carrots (my main reason for buying this cut) Carrots - 2-3 pounds garlic - 5-7 cloves olive oil - 1/3 cup vinegar - 1 teaspoon lemon juice from 2 lemons coriander or curry mix - 1- 2 teaspoons 1 teaspoon sea salt Wash, peel and then chop carrots. Heat the olive oil and vinegar until the vinegar starts bubbling, remove from the heat. Squeeze the garlic to the carrot, add spices and pour warm oil over them. Mix all ingredients. Leave to marinate for a few hours (no need to refrigerate). Enjoy!
