I retired my freshman year and now we have a virus keeping us at home so I told my wife I've decided to make bread to bake. The first batch of bread was fantastically good, but there were some 'cosmetic' issues and trouble cleaning the pan that spoiled the experience a bit. Also, I killed our crappy hand mixer with dough hook, but that's probably another story. The pots we had were I believe 8 x 4.5 and plain aluminum. The loaves baked well, but with a tiny bottom and a huge top, they looked like an elephant on stilts. The ceramic bread pans were recommended by the author of the online bread recipe I used. I have these 9x5 pans and now the loaves are perfectly formed and literally fall out of the pan. I only hand wash them and they are so easy to make - NOTHING sticks like our old pans. - The pans are very strong and have "handles" on the end to make them safer and easier to pick up and move. Before I stumbled across THESE pans, I've seen others that were just a rectangle with nowhere to grab. I forgot and after 12 minutes just pulled the pan out of the oven to tip the bread onto a cooling rack. I found that the pan didn't burn fingers as expected, just warm to the touch. I'm assuming this is a function of the ceramic coating, but DISCLAIMER: This is MY experience with these pans. Think before you take something hot out of the oven!
