Great overall value

This is a great knife for the price period! Yes it is possible but not very convenient. However, I like the profile, edge and overall functionality of this knife for a dime compared to other higher profile knives. So much so, in fact, that I have a 14-inch slicer, a flexible boning knife, an 8-inch chef's knife, a bread knife, and a hard-blade Renaissance boning knife, all well above their price points. I'm not a chef, but I've been involved with knives since I was a child (decades). Not only are these good knives for beginners, these are damn good timepieces. I have a set of Henkels International Series Swilling knives which are rubbish compared to edge retention and comfort. Quality and service and very affordable price. If you work commercially, they are NSF certified!
