Used for instant rubs of garlic, shallot, ginger, turmeric and galangal. Simply grate and use to add a powerful flavor to sauces. The mandolin is a bit small for large pieces of ginger and the slices can be wedged in the indentation. It has replaced my garlic press and my usual garlic and ginger microplate (but not for other foods like cheese).
