I have a hard time sharpening knives. I bought the smaller Chef's Choice many years ago and was able to get a pretty good edge, but not as sharp from the sharp blades, which I like when chopping veggies rather than meat or poultry. I've tried using a whetstone but couldn't maintain a constant angle to the stone, let alone tedious to use. When I received the sharpener, I followed the instructions to the letter, I was able to get the blade I was looking for with my handle chef's knives. I even use it for my good pocket knives which I've almost given up on sharp blades of any kind and it works great without shedding too much metal.
