Thermocouple thermometers are by far the most accurate, and I tested this thermometer against the $240 four-probe thermocouple system I used in my research. It was consistently within 0.3°F of the more expensive tool, which is good enough for me. Thermocouple sensors are more accurate because they have an accurate algorithm for assigning temperatures, unlike the more common thermistor thermometers that require individual calibration to ensure accuracy. My only comment is that the tip can be sharp so be careful with it. However, that sharp tip is also one of its strengths, as it allows for both speed and placement accuracy, which is critical for measuring temperature in a thin cut of meat. Put simply, this is the best meat thermometer I've ever used.
