The ThermaPro TP620 replaces a cheap "probe" bought a few years ago. It's significantly larger than the other (6.5 x 1.5 inches when folded). It was great for making Thanksgiving turkey, but for me its main purpose is to make ice cream and ricotta. It folds up and hangs on the rim of the pot so it doesn't touch the bottom of the pot, and it's sturdy and heavy enough that you can stir ingredients without tipping the thermometer into the mixture. The cheap fold-out version is now difficult to read due to the cheap plastic display lid and could only be used with liquids by (a) sticking it in the mix from time to time or (b) poking it through a wine cork so it can be suspended in liquid and sensitively balanced on the edge of the pot, not one of the best solutions. The only downside to both seems to be that I prefer a left-handed display, but this one doesn't pose as much of a problem as the stylus-type in that regard. It's worth the difference in price if you need a thermometer on a regular basis, maybe not much for the occasional cook.
