I have a standard mix of cutting knives and various high end knives and I cook in our kitchen all the time. About 3 weeks ago I had trouble dicing a cucumber. .yes, you got me right, the tipping cucumber. I realized I needed to sharpen my knife. After checking out the others, I realized that I actually need to sharpen all my knives! All were very bad. So my journey to finding a handy and useful knife sharpening tool to use on the 20+ knives in my house has begun. After weeks of research, reading articles, watching videos and reading reviews, I decided to use this tool. The Presto 08810 professional knife sharpener arrived and I put it to use immediately. I read all the instructions and started sharpening. After some practice on the first knife, I put all my knives through sharpening steps 2 and 3. I ran the knife through each step about 4-5 times on each side. Very little force is required when pressing. The trick to getting super sharp blades is to hold the blade flush with the orange adjustable guide and pull it slowly and evenly on both sides several times. The instructions that came with it said to pull the blade 2 inches per second on each side of the blade, but I found that 1 inch per second gave me the results I was looking for. Yesterday I sharpened 25 knives in about 25 minutes (learning curve included). I used a couple of my newly sharpened knives while cooking dinner today and was incredibly pleased with the "sharp" results! As an additional test, I pulled out my old 30-year-old pocket knife (when I was in the Boy Scouts), which was insanely dull. See what this sharpener can do. This time I used all 3 steps and again was very happy with the results. The knife is very sharp now and I'm sure it will stay that way for the foreseeable future. I would recommend this sharpener to anyone who owns a number of knives who want their blades to be sharp and cut properly. Now I don't have to worry about a dull blade slipping or cutting through food while cooking. Happy sharpening!
