They work, but it's better to look elsewhere.

TL;DR There are better sharpening stones (at the same price or less) that are more pleasant to use and give similar or better results. Don't worry about those stones or you might hate sharpening your knives. I used to have a 1000/3000 sharpening stone from another manufacturer but decided on this set because I was interested in a sharpening set that included a coarse stone like 400 as I had chipped knives that I wanted to get rid of as soon as possible wanted and also wanted to try 8000 for a higher degree of polishing. I also saw that the alignment of the sharpening stone was important and the fact that this set included a leveling stone made it too good to be true and it was. Don't get me wrong, you can get a very sharp edge with this set if you use the right technique. However, the stones are incredibly soft. When I sharpened my knives, I removed more material from the stones than the steel in my knife. This made the grinding process very messy and frustrating, as I had to constantly clean the surface of the stones to remove stone build-up, as well as my knives to remove stone material stuck to it. I really like sharp knives, so I started sharpening my own knives, but there's the added benefit of the process being enjoyable and meditative. The softness of these stones is a complete distraction and makes knife sharpening a pain. If you're keen on sharpening your own knives, look for another set of whetstones. If you just want a sharp edge, there are cheaper options that are really good to use. I used to have a TAIDEA 1000/3000 which I bought a few years ago for under $20 and it gave me the same results (in terms of a home cook) as this set and I've had it without for at least 3 years den used need of alignment. stones. If you're looking for a complete set that's also cheaper, you might want to check out the Sharp Pebble. I don't own any of their stones, but I hear all the time that they might be the best economical option.
