
was supposed to arrive at 9pm but arrived at 7pm, my oven was already preheated for over an hour. Place the new baking steel in the oven (first without rinsing so don't try this at home lol) and second on the top shelf. What I like: My pizzas had a nice crust that didn't budge on top (no crease), yes it was crispy. well browned at the bottom of the crust. I put it in the oven on the second highest rack and baked the pizza in 4 minutes. Patina started to form after one pizza session, there will be more pizza soon! Easy to clean. While still very hot, I wiped down the surface of the steel with damp paper towels. I used pliers for easy and safe wiping. what I don't like: heavy, but I understand that very well. I want a good homemade pizza and heavier steel means heavier steel. and because it's very heavy I've decided to keep it in the oven so that every time I bake bread a good Maillard reaction develops on the bottom of the bread.
