Review on Professional Chef Knife: Ontel EverBlade - Self-Sharpening for Enhanced Performance by Heidi Young

A sharp gift for cutlery and knife accessories

We've had this for almost a few months. This was a present for my wife. She loves it. (I really got a permanent "thank you" for that, guys!) It's light, VERY spicy. I will tell you so many. BE CAREFUL, especially when wiping anything off the blade. If you tend to run your finger along the edge of the blade to wipe something, be careful. Great for everyday use. I am very happy with the price. A quick hit or 2 pulls him out of base and he seems to have a very good advantage. The curved design naturally creates a stable rocking motion for a very smooth chop/dice cut. I don't find much of a difference between slicing the tomatoes or the unpeeled cucumber. Lighter than expected with a comfortable grip to make it comfortable for your hand and hand. I prefer a heavier blade, but the razor sharp edge and thin blade design seem to make up for that. I often cut watermelons and would have liked a slightly longer blade for this, but so far no particular complaints. If they made a longer version, I would go for that too. Rinse, hand wash and dry each time. It still looks like new. It's really smaller than expected and stable when drawing the blade, especially when I put my hand over the plexiglass sheath. All in all, I wholeheartedly recommend it.
