I believe in this sharpener!

I'm old, I'm a homemaker and I love this knife sharpener. Chef's Choice 120 is the third generation of knife sharpeners. I bought it on the recommendation of Cook's Illustrated/ATK. My previous sharpener was an inexpensive Accusharp, which I also bought on the recommendation of CI/ATK. HEED the advice of many previous reviewers: read the instructions! I have done this and am very slowly moving towards sharpening all my knives that need sharpening. As a result, they're not exactly at Bob Kramer's level (using a chef's knife to cut hemp rope in one motion), but they're much sharper than ever with Accusharp, and perfectly sharp to be just as safe. use of the kitchen. The instructions that come with Chef's Choice are incredibly detailed and incredibly easy to follow, so read them carefully. Pictured: First generation Handstein, purchased around 1970. Note the curvature. I spent my entire paycheck buying my first Sabatier and after ten or two years it was just as crooked. Still, I'm keeping the stone because it's invaluable for sharpening terribly dull knives in the church kitchen!
