I don't do this very often so I didn't want to spend on a super expensive knife

I buy big cuts of beef and long pork tenderloins because it's cheaper than buying pre-cut steaks or chops. I used an 8" chef's knife and it just didn't cut it (pun intended). It was too big for complex cutting work and too wide for slicing. I don't do this very often, so I didn't want to break the bank for a super expensive knife. This knife is great. I use it for trimming fat and slicing chops. The price was right and it does the job like a pro It's so flexible you can use it for thinning with impunity too.
