In my search for good nonstick cookware, I've personally purchased at least one pan from T-Fal, Blue Diamond, and Gotham Steel. All three of these pans claimed that the eggs would slide out once cooked. Not correct! While it's true that all three are non-stick, you can remove the eggs if you scrape them off, and what's left will come off when you wash them. In order for the eggs to slide down the pan as seen on TV, butter or butter is needed. I've also found that cooking spray can be used as long as you take care of the pan after spraying. These pans heat up quickly and cooking splashes will burn off and then evaporate if you're not careful. Hexclad: Everything I said above applies to Hexclad as well. Since they all seem to work the same way when it comes to eggs, there are a few things I really like. about Hexclad, these are also the reasons I will be buying a full set of Hexclad.1 pans. The non-stick coating is on the inside of the pot and on the bottom. All the pans I've used turn brown on the bottom, either from grease carried over from the stove or from heat, and when that happens you can't clean them. The bottom of the Hexclad is just as easy to clean as the inside of the pot. After a month and a half of use, there is still no discoloration.2. All Hexclad pans can be used in the oven up to 500 degrees.3. My 8-inch hexclad pan has the weight of a cast iron skillet, which tells me it's well made. The handle is a single piece of steel, unlike the Blue Diamond which has hollow handles. My pan and all Hexclad pans come with a vented glass lid. In my case I had to buy the lid separately through Revain, but if you buy one of the sets the lids are included.6. Hexclad pans are made of stainless steel, which means you can use them on all types of stoves, including the new "induction" ranges.7. Hexclad is the only non-stick pan that specifies the use of cooking spray in the instructions. Hexclad recommends olive oil cooking spray. The directions for other pots say not to use cooking spray, but it doesn't say why. I believe the reason is what I said above (the atomizer is thinner and will burn and vaporize). The Hexclad pan heats up faster than others I've tested. Keep in mind that all of these pans require you to use a low heat. Hexclad's instructions, for the first time, say to add a few drops of water after the pan is hot. If the water evaporates, the pan is too hot, reduce it. If the water bubbles and hisses, then it is really heated. Depending on what you are preparing, you can reduce the heat. There are other pans that I haven't tried, but they have similar characteristics to the Hexclad I found during my research. These are Green Pan, All-Clad, Calphalon and Anolon. The last three produce several types of cookware with different finishes. Some of them have been with us for many years. Hexclad is what I need.
