Great pan for tarte tatin and more!

Tarte Tatin Black Cast Iron is a raw unglazed cast iron as I expected based on the answers to my question. The pan is a good weight - not too heavy, but not too light either. My first use would be deep dish pizza, but I also know I'll be using them for pies, quiches, mac and cheese, baked pork chops and chicken, and maybe even tarte tatin! The box states that it is covered in red enamel. never mind Again, the black pan is not enameled. According to the instructions, it should only be washed once with soap and water. I want to dispel the myth that dish soap is bad for cast iron. It's a holdover from the days when the lye in grandma's soap took the spice out of it. Dish soap will NOT remove seasoning from cast iron. A yellow cap oven cleaner or electric tank is required to remove spices and deposits. This is my soap box and advertisement! What I didn't notice in the photos is that the handles are slightly curved down. This neat feature makes tarte tatin less of an adventure! Four stars instead of five - because the casting is rougher than I would like. I would have preferred a smoother pan, but I know the roughness doesn't affect use and performance. So if you have your eye on this pan, put it in your shopping cart and get ready for some sweet or savory treats.
