Super sharp, light weight and well balanced

Love this knife. However, I recommend being aware of what a ceramic knife can and cannot cut, and how brittle it is compared to steel. This Kyocera knife was sharp and stayed sharp. The old Kyocera we have is over a year old and still as sharp as day one. When DH gave me the first one, he explained that it doesn't need to be sharpened as long as it's used strictly on soft materials and never falls off. Good, because I've heard that ordinary sharpeners no longer exist, that ceramic blade sharpeners are made of a substance as hard as diamond. All in all these are great knives. Super sharp, light weight and really well balanced. As long as you know you will never use a ceramic knife for hard or frozen objects, I recommend Kyocera ceramic knives as they cut easily and don't require much sharpening.
