This is a beautiful knife, holds the blade very well, sharp as a deakin but if you use this knife or plan to use it commercially it has a flaw, it fits perfectly for slicing, easily rolls bones and has excellent properties. flex to get into hard-to-reach spots and odd angles, but once you get it down to the killing ground it's on par with other great knives until you progress to chopping off beef legs. The joints are stiff and will flex the tip of this knife if you try to score and slice too aggressively. I've found it better to use the heel of this knife than the tip when cleaving joints and may need to switch between this and your more durable skinning knife. All other aspects are fine, just don't do it. tinker with it and your gold would give it five stars if it held up better to looking, but the mines are still in great condition. I have no other complaints
