The downside to this thing is that it's so heavy it takes a long time to heat up - probably 15 minutes. You can heat it up faster, but not without hot spots. Also, it takes 30 minutes to cool down again. Oh, and you're going to have to get really creative to find a place to store this stuff. It's best to season pots in the oven, where you can control the temperature, but you won't do that with this; It's too big to fit in the oven. Still, I fired it up for the first time this weekend and baked 16 pancakes at once. I also have 12x24 for bacon. 1.5 pounds thinly sliced bacon in a non-overlapping skillet. So now dad is sitting down with his family at the table and not standing at the stove and is preparing the second (and third) round of pancakes. it is on a gas stove. This is a professional oven. The only downside is that if you raise the fire too high the igniters on the stove will start firing, I think they think the fire went out due to lack of oxygen but I can't tell you. Just keep the fire on medium and everything works fine.
