
I use it for thin crust pizza and also for baking lavash and tortillas. It is ideal for both purposes. The pizza will bake evenly and take on a nice even brown color as it should. For flatbread and tortillas, this is the ticket. Flatbread blows and separates perfectly—much better than in a cast iron skillet. Flatbread will brown properly and bake evenly without leaving room for dough like stovetop pans do. Prepare it by washing it thoroughly and letting it dry completely. Then place it in a preheated 350 degree(F) oven for half an hour. Turn off the oven and let it cool in the oven until you can touch it with your hand. It emits an odor for the first time in the oven; less often the second and third time. After that the smell was gone. It's not a bad or chemical smell, it's just the normal smell of new pottery when it's first heated. I would give 5 stars if it came with a grille.
